Tasting notes:
Nose: Vanilla soft serve, churro, pie crust
Palate: Front of the palate follows the nose with the nuttiness and brown sugar sweetness of pecan pie. That flavor hangs throughout each palate phase. It's joined by cherry candy in the mid-palate and some spicier notes of black pepper, cinnamon and nutmeg jumping in at the back of the palate.
Finish: As is common with the product, the finish is long and persists, encouraging more to savor between sips.
Overall: Barrel proof Elijah Craig has a reputation for just these palate notes. And they're great. Unfortunately many of these picks are marred by fiery palates where "burn" is the biggest note and "bitter" is uttered too commonly. This barrel comes in relatively low proof for such a pick and is completely spared those dissonant notes. That's something to celebrate.
